Ingredients for 2 people:

-1 berenjena

-1 pepper

-Minced meat (we prefer beef) with 2 cloves of garlic-300 grams

-1 onion

- 1 tomate

-A large spoonful of tomato sauce

-Hard cheese

-Oil for frying.

preparation:

Roll up the eggplant and pepper and take out the center. Chop the cloudy part of the eggplant, onion and tomato. Fry the chopped vegetables in oil, add the minced meat and fry everything together, adding the tomato sauce at the end. Season with salt and pepper.

Put the filling in the reserved vegetables and sprinkle with grated cheese. Bake at 180 °C for 20-30 minutes, depending on the type of crisp you like. For example, I like that the cheese is barely melted, but this time I made it crispier for my husband.
