Wash the tongue well and cook it for an hour.

Cover with cold water, cool and peel.

Add 1.5 tablespoons of salt, carrots, onions, garlic, bay leaves and peppercorns to a saucepan, put the tongue and cook for 1 more hour.

Basically, you can eat with great pleasure. But if you want a main course instead of an appetizer, cut the tongue into 1 cm thick fillets and fry them in butter. In the same oil, fry chopped garlic, a little thinly sliced onion and add cream. When the sauce has set, add the tongue and cook it for a minute on each side.
