Cold beetroot soup

Ingredients:

2 large roasted beets (it is very important to roast fresh beets, do not buy boiled beets)

1 fresh pepino

4 boiled eggs

A handful of radishes

1 boiled chicken breast and broth (don't overcook the meat to make it juicy)

Green onions, coriander

1 tablespoon mustard

Juice of half a lemon

150 grams of natural greek yogurt

A bottle of low-fat liquid kefir

preparation:

Mix the beets, egg yolks, kefir, yogurt and mustard well in a mixer until a homogeneous mixture is obtained.

Cut the egg whites, chicken, cucumber and radish into thin strips. Chop the herbs finely. Add the lemon juice, the cold broth and the beet mass, salt and pepper. Mix well.

It is put in the fridge for an hour and a good benefit!
